Chicken

Dressed poultry bought fresh from a market stall or slaughtered on the estate, delicate white meat prized for its tenderness. Households and taverns roast chicken whole or joint it for stewing; a single bird feeds a family or small gathering. The meat spoils quickly unless salted, smoked, or jerked, but freshly killed chicken is sweet and easily digested, preferred by the elderly and infirm.
