Grease

Rendered fat—mutton, beef, or hog—cooled in a clay pot and sold in lumps for cooking, waterproofing leather, and axle lubrication. Smiths, tanners, chandlers, and kitchen cooks all keep supplies on hand. The grease yellows and hardens with age but does not spoil.
