Fresh cow’s milk, drawn into a wooden pail at dawn, is sold by the gallon at market or delivered to townhouses daily. Rich and creamy, it curdles into cheese or butter by afternoon; soured or turned, it becomes whey and curds for cooking. Most milk is consumed within a day or soured intentionally for preservation.
