Oysters

Oysters—briny shellfish harvested from coastal beds—are sold fresh at harborside or preserved in salt and smoke. Fresh oysters spoil within a day or two; salted and smoked they last weeks and suit a soldier’s or sailor’s rations. Coastal inns serve them raw; inland folk prize them as a rare luxury.
