A wide, shallow copper pan tinned inside and fitted with a long iron handle, used for frying and sautéing at a cook’s hearth. The large size allows the cook to move several portions at once, and the copper conducts heat evenly without scorching. Such pans are expensive enough to be kept in a prosperous household’s kitchen, suspended from a rack or returned to its hooks after each meal, and hand-washed rather than scoured.
