Pike is a freshwater predator with firm white flesh, netted from slow rivers and lakes. The large bony head is discarded; the fileted body yields flaky meat that takes salt and smoke well. Fishmongers sell pike whole or gutted; travelers carry smoked pike on long journeys, or salt-cured fillets that last months but require soaking before cooking.
