A bag of salt contains coarse crystals from evaporated seawater or mined rock salt, used for preserving meat and fish. A single bag seasons a day’s cooking or cures a joint of pork. Kitchens and dairies keep salt close; merchants trade it for food when local sources are exhausted. Salt attracts moisture and hardens in damp air, but remains usable if broken apart.
