Swan is the dark, gamey meat of waterfowl, reserved for noble tables and wealthy feasts. The large bird yields substantial meat; the long neck must be picked carefully. Fresh swan is roasted whole; older birds are preserved by smoking or salting. The feathers are stripped for fine quilts and bedding, and the bones boiled for strong stock. Swan meat is stringy and tough without careful cooking.
