Venison is the lean, gamey meat of wild deer, dark in color and rich in flavor. A single deer yields substantial meat, often divided among a hunting party. Fresh venison is roasted or stewed; aged venison develops deeper taste but spoils quickly in warm weather. Smoked venison is preserved in strips; jerked venison becomes hard and chewy, sustaining hunters for weeks. The hide is tanned for soft leather.
